PROFESSIONAL INSTRUCTION
LOS DOS MAESTROSAll-inclusive workshop September 22, 23, 24, 2010 – Yucatán - with a French twist! This three-day intensive workshop in September was created for chefs, avid home cooks or simply those who would enjoy learning modernized Yucatecan cuisine. Our "master class" will focus on the more unusual ingredients and recipes of the region: everything from maíz kuxum, a rare dish of pit-roasted corn fungus, to tamales de boda, the exquisitely delicate strained tamal created especially for weddings. Presentation techniques will also be emphasized. In addition to Chef Sterling's instruction, local chefs will provide demonstrations using exotic regional ingredients and techniques. |
