Experience new takes on traditional Maya and Yucatecan dishes. Let Chef Sterling surprise and delight you with concoctions both ancient and futuristic as he employs local ingredients and techniques with a French twist! Menus focus on a theme and change seasonally to reflect regional holidays and feast foods, as well as available ingredients. The emphasis is always on fresh, high quality local meats, fish and produce. His recipes are designed to advance the true fusion that has always been a hallmark of Yucatecan cuisine.
