  Organic Dzidzilche honey
Organic Dzidzilche honey

Dzidzilché (Gymnopodium floribundum) is a plant unique to Yucatán. It is a woody bush that from March through May produces a tiny pale green flower with a lightly sweet floral fragrance. Dzidzilché honey has a pale amber color and an unmistakable tropical flavor. Because of its superior characteristics and low moisture content, it is recognized among connoisseurs as being one of the world’s finest honeys.

Organic Tajonal honey

Tajonal (Viguiera dentata) or “toothleaf goldeneye”, is a member of the aster family. Tajonal produces a bright yellow flower that covers the countryside from December through February. Traditionally the Maya people have used its dried stalks and stems to make brooms and other household items. Tajonal honey is a deep golden color. At 78.5% sugar content, it is Yucatán’s sweetest honey.

Organic honey roasted peanut butter with chocolate

The organic peanuts we purchase come from a cooperative of small producers in the Isthmus of Tehuantepec. The peanuts  are roasted in Yucatecan dzidzilché honey, then ground to creamy smoothness. Perhaps gilding the lily, we blend in chunks of 100% organic Criollo chocolate from Tabasco – considered to be the world’s finest. It was Criollo chocolate that was given by the Maya to the Spaniards – the first chocolate ever to be tasted by Europeans. The valuable Criollo variety had been at the point of near extinction until producers like ours rescued it by developing innovative grafting methods. Each order of chocolate we receive has been produced to our exacting specifications.

  Smooth and creamy organic peanut butter

Our organic peanuts are grown by Comunidades Campesinas en Camino ("Farmer Communities on the Way") – a cooperative of some 600 small indigenous growers in the Isthmus of Tehuantepec. The cooperative was formed to ensure fair prices as well as to establish just labor practices and environmentally responsible farming methods in this traditionally impoverished region. Comunidades Campesinas en Camino has acquired both CERTIMEX (Mexico) and NATURLAND (Germany) certification as organic producers. We finely grind the roasted peanuts to creamy smoothness, and add just a touch of sea salt from the Maya coastal region.
