Los Dos Maestros Three-Day Workshop

Available year-round by request.

All-inclusive three-day workshop – Yucatán – with a French twist! This three-day intensive workshop was created for chefs, avid home cooks or simply those who would enjoy learning modernized Yucatecan cuisine. Our “master class” will focus on the more unusual ingredients and recipes of the region: everything from cerdo pelón, a descendant of the pig breed brought to the Americas by Cortés, to tamales de boda, the exquisitely delicate strained tamal created especially for weddings. In addition to Chef Mario’s instruction, local chefs will provide demonstrations using exotic regional ingredients and techniques.
