The Yucatán Express is ideal for those who have a tight travel itinerary that doesn’t allow for attendance at a regular public class – or for those who would simply rather eat than cook!

This overview class, let by Chef Mario Canul, includes an overview of the culinary history of Yucatán, as well as a trip to Mérida’s ever-fascinating market. We end the experience with lunch at a typical regional restaurant, where Los Dos will help you navigate the menu and order a broad sampling of specialties authentic of Yucatecan cuisine.

STANDARD CLASS INCLUDES
The restaurant we visit for this class is Manjar Blanco, squarely in the heart of Mérida’s historic center. Located on the charming Parque de Santa Ana. La Tradición and Los Almendros finally have some stiff competition in the “traditional Yucatecan” category. Not a large menu but with some interesting riffs: a combination plate featuring smoked meats from Temozón; Cuban tostones (which they call tortillitas) topped with pulled pork; and a queso relleno negro – Edam stuffed with chopped meat in Yucatán’s signature charred chile sauce. Chef Mario will help you order, and will explain every item on the menu. We’ll make certain that we order several dishes, including appetizers and main courses, so that you experience the full range of Yucatecan flavors.

LUXURY CLASS INCLUDES
The restaurant we visit for this class is Hacienda Teya. Located on the Cancun highway on the outskirts of the city, this restored 17th century hacienda is renowned for the Yucatán’s most authentic and expertly prepared cuisine. A trip to the hacienda for a meal is never a disappointment. Stroll the grounds and see a small garden featuring local food plants. Sample regional specialties, such as Pan de Cazón (“shark pie”); Queso Relleno (a Gouda cheese stuffed with spiced meat); and the hacienda’s memorable Papadzules (egg-stuffed tortillas bathed in a pumpkin seed sauce). Chef Mario will help you order, and will explain every item on the menu. We’ll make certain that we order several dishes, including appetizers and main courses, so that you experience the full range of Yucatecan flavors.
